Vidalia Beef Bouillon Bomb
I had to start this page primarily because of this one dreamy but simple recipe.  In my opinion, it's one of the best things I've ever put past my lips.  It goes good with anything, but in particular, it's great with steak (instead of a baked potato).  Here's how it works.

1- Using a Vidalia onion, peel the outer skin off, then cut out the core creating a 3/4" hole/pocket in the center (don't go all the way through the onion). 

2- Place a beef Bouillon cube in the hole (press  to bottom of pocket).

3- Fill the rest of the hole with butter or your favorite substitute.

4- Place the onion in a casserole dish and cover.

5- Microwave on high for six minutes (or 10-12 minutes for 2-3 onions).

6- Remove from microwave and place a slice of Swiss cheese on top.  Replace cover and wait until the cheese melts.

7- Enjoy!  If you have a steak, the juices in the bottom of the dish make a great steak sauce.

Note: This will also work on a grill by wrapping the onion in foil, but the microwave is much easier to control.
